This delicious clean Keto Jelly Roll is made without any flour so it is nut free. The sponge cake is light and fluffy which makes this keto dessert very refreshing. Made with home made keto jelly and Italian meringue - it is a must try!
Gradually add the powdered sweetener while continuing to beat until mixture becomes light and cream colored
Add the vanilla, gelatin, and egg white powder and beat until completely mixed
In a separate bowl, beat egg whites until they form stiff peaks
Gradually fold in the egg whites into the egg yolk mixture 1/3 at a time
Fold until the egg yolks and egg whites are completely combined
Line a jelly roll pan (1/2 sheet pan) with parchment paper
Spread the mixture onto the pan smoothing out to even layer
Bake in 350 F oven for 20 minutes or until toothpick comes out clean
Remove the cake from the oven and cover with aluminum foil
While the cake is cooling, mix up the Keto Italian Meringue (http://ketonaturopath.com/keto-italian-meringue/ )
While cake is still warm, spread fruit jam over the cake (http://ketonaturopath.com/keto-fruit-jam/)
Spread thin layer of meringue over the jelly layer
Roll the cake to form the Jelly Roll
Refrigerate for at least 1 hour
