Keto Pumpkin Muffins with Ground Chicken

These Pumpkin Muffins are very low carb.  They are made with ground chicken so they are nut and dairy free.
They are so good!

Ingredients

  • 1 lb ground chicken
  • 2 tsp gelatin
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 TBS egg white powder
  • 1/2 tsp salt
  • 6 eggs separated
  • 8 oz canned pumpkin

Instructions

  • In a skillet, cook the chicken place in food processor and process until smooth
  • Add the canned pumpkin, egg white powder, gelatin, egg yolks, baking soda, baking powder, and salt to the food processor and process until smooth.
  • In a large bow with a hand mixer (or stand mixer) whip the egg whites to a stiff peak
  • Add the chicken mixture to the whipped egg whites and fold in until it is all mixed
  • Pour the batter into the muffin tins
  • Cook the loaf in 350 F for 30 minutes
  • Remove from oven to cool
  • Enjoy!

Notes

Optional additions are: pepper, onion powder, garlic powder, other spices - add at 1 tsp
