In a medium frying pan, cook the ground chicken.
Place the cooked ground chicken in a food processor and let cool.
When the chicken has cooled, add the egg yolks, baking soda, and baking powder. Process until smooth.
In a large mixing bowl, add the egg whites, egg white powder,gelatin, and stevia.
Whip the egg whites to a stiff peak.
Add the chicken mixture to the egg whites and combine thoroughly.
Add the cranberries and mix well.
Spoon the mixture into muffin tins.
Bake at 350 F for 30 minutes.
Remove the muffins from the oven and cool some before removing them from the tins.
