Keto Chocolate Cinnamon Muffins

These moist muffins are made with pork rind flour and are delicious! Just the right hint of cinnamon mixed with chocolate

Ingredients

  • 52 grams hemp milk 1/4 cup
  • 76 grams pork rind flour 1 cup
  • 110 grams xylitol 1/2 cup
  • 8 drops liquid stevia
  • 59 grams mayo 1/4 cup or 8 TBS
  • 1 tsp vanilla extract
  • 1/2 tsp maple extract
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/8 tsp salt
  • 4 eggs
  • 17 grams cocoa powder 4 TBS or 1/4 cup

Instructions

  • Heat oven to 350 degrees F
  • In a large bowl, mix together the pork rind flour, baking soda, baking powder, cocoa powder, salt, and cinnamon.
  • In a separate bowl, mix the eggs, mayo,vanilla, maple extract, liquid stevia, and xylitol until the xylitol has incorporated into the mixture. (I would use my high speed blender for this).
  • Add the hemp milk and mix in or blend.
  • Combine the wet and dry ingredients until well incorporated - again I would use my high speed blender.
  • Coat muffin tins with oil - or use muffin liners.
  • Fill muffin tins 3/4 full - should make 12 muffins
  • Bake at 350 degrees F for 25 minutes
