Keto Gingerbread Cookies
These Gingerbread Cookies taste AMZING! They are moist and oh so good!

- 121 grams almond flour 1 cup
- 40 grams xylitol w/4 cup any granular sweetener
- 1 TBS ginger
- 1 TBS cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp maple extract
- 1/2 tsp vanilla extract
- 2 egg whites
In a mixing bowl, combine the dry ingredients
In a separate bowl, whip the egg whites to a soft peak
Add the maple and vanilla extracts to the egg whites and whip to stiff peak
Gently fold the dry ingredients into the egg whites
Use a spoon of cookie scoop and drop small mounds of dough onto a parchment paper lined baking sheet (about 1 TBS)
Bake at 325 F for 15-18 minutes
Remove from oven and let cool on pan for 5 minutes
Transfer the cookies to a wire rack to complete cooling
