Keto Italian Pistachio Cookies
These Keto Pistachio cookies are so good!
They taste like pistachio macaroons - reminds me of my childhood eating cookies from the Italian bakery.

Ingredients

Instructions
Preheat oven to 325 F
In a small bowl, mix the almond flour, xylitol, pistachios, and salt
In a large bowl, whip egg whites until a soft peak forms.
Add the almond and vanilla extract to the egg whites and continue whipping to stiff peak
Fold the dry ingredients into the egg whites until combines
Drop mounds of dough onto a parchment lined cookie sheet using a spoon or cookie scoop
Bake for 15-18 minutes until the edges are golden brown
Cool on baking sheet for 5 minutes then transfer to a wire rack to cool completely
