Keto Crab Bisque - Dairy Free Option
This Crab Bisque is so creamy and delish - everyone will love it. Can be made with heavy cream or dairy free

- 2 TBS olive oil can use butter if not dairy free
- 6 grams minced onion 1/4 cup
- 8 oz clam juice
- 2 cups chicken stock
- 1 can coconut cream or 2 cups heavy cream
- 1/2 tsp worcestershire
- 1/2 tsp nutmeg
- 1 tsp old bay seasonin
- 1 lb lump crab meat
- 1/4 tsp cayenne pepper
In a large stock pot, saute the onion in the olive oil. Cook until soft (3-5 minutes)
Add clam juice and chicken stock to the pot and bring to boil
Reduce the heat and add the coconut cream and heat until it is warm/hot but not boiling
Add the worcestershire, nutmeg, old bay, cayenne,and half the crab meat
Simmer for 5 minutes
Ladle soup into bowls and add remaining crab meat.
Enjoy!
The clam juice and chicken stock can be any combination to equal 3 cups.
Any seafood stock can be used.
