Keto Antipasto Salad
This is a great clean keto appetizer to bring to any pot luck. I bring it all the time where I am the only keto person, and it disappears quickly!

- 6 oz cubed salami
- 6 oz cubed pepperoni
- 6 oz cubed ham
- 6 oz cubed cheese provolone, cheddar, mozzarella
- 1/4 cup black olives halved
- 1 red pepper chopped can use jarred roasted red pepper
- 1/4 cup chopped red onion
- 1/4 cup pepperoncini
Dressing
- 3 TBS olive oil
- 1/2 cup red wine vinegar
- 2 tsp oregano
- 1 tsp basil can use fresh
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 cup chopped artichoke hearts optional
green and calamata olives can be added
artichoke hearts are optional
If you like more oil and less vinegar, alter the amounts
Fresh parsley can be added just before serving
