In a large mixing bowl or stand mixer, combine the egg whites, egg white powder, and the gelatin
Whip the egg whites to a stiff peak, can take up to 6 minutes
Just before the egg whites are at a stiff peak, add the cinnamon and banana extract and continue beating
Pour into loaf pan and bake at 325 F for 30 minutes
Turn off oven and let the loaf cool for at least 1 hour even better over night
Once completely cooled, remove from oven and place loaf in zip lock plastic bag and refrigerate until use.
