Coconut Pecan Frosting

Instructions
Chocolate Cake
In a large mixing bowl, put the 6 egg yolks and beat until they are light and pale
Add the sweetener gradually and beat until the mixture is light and creamy
Add the cocoa powder and extract, mix well
In a separate mixing bowl, whip the egg whites to a stiff peak
Fold the egg whites into the chocolate mixture
Pour into 2 8" cake pans
Bake at 350 F for 20 minutes
Remove from oven and let cool before frosting
Coconut Pecan Frosting
In a medium saucepan, whisk the coconut cream, egg yolks, and xylitol
Add the butter and bring the mixture to a light boil
Continue cooking and stirring until the mixture is thickened - about 3-5 minutes. Do Not Over Boil
Remove the mixture from the heat and stir in vanilla, gelatin, pecans, and coconut
Pour into mixing bowl and let cool for about 1 hour before frosting the cake
