Keto Potato Salad with Radishes
This is a great keto side dish for all your summer gatherings. It is 'potato' salad made with radishes instead of potatoes. It is light and delicious - everyone will love it!

- 16 oz radishes
- 120 grams mayo
- 2 TBS dill relish
- 2 hard boiled eggs chopped
- 1 TBS mustard
- 1 TBS apple cider vinegar
- 25 grams chopped onion
- pinch salt
- 1 tsp black pepper
Boil radishes until soft.
Drain well
in small mixing bowl, combine all other ingredients
Pour over radishes and mix well
