Keto Potato Salad with Radishes

This is a great keto side dish for all your summer gatherings. It is 'potato' salad made with radishes instead of potatoes. It is light and delicious - everyone will love it!

Ingredients

  • 16 oz radishes
  • 120 grams mayo
  • 2 TBS dill relish
  • 2 hard boiled eggs chopped
  • 1 TBS mustard
  • 1 TBS apple cider vinegar
  • 25 grams chopped onion
  • pinch salt
  • 1 tsp black pepper

Instructions

  • Boil radishes until soft.
  • Drain well
  • in small mixing bowl, combine all other ingredients
  • Pour over radishes and mix well
