In a large bowl, beat the egg whites until they are foamy.
Add the sweetener to the egg whites and beat until well incorporated
Add the extract and salt and combine well
Add the coconut and mix until all the coconut is incorporated with the egg whites
With a small cookie scoop (1.5 TBS) or Tablespoon, spoon cookie onto baking sheet
Bake 20-25 minutes or until the edges are lightly browned
Remove from oven and let cool completely
Store the cookies in an airtight container

Notes
If you have dogs - you may not want to use xylitol as it can be deadly.If you have cats - be very careful and do not let your cats eat anything with xylitol.You may need 3-4 egg whites depending on the size of your eggs. Make sure the mixture is a little wet and not dry or the cookies will crumbleYou can use any extract you like - I happen to like almondMake sure the flaked coconut is unsweetened - you may have to look a little as it is not the most common form of coconut.
