Keto Coconut Macaroons

This keto version of Coconut Macaroons is so good, you will not think it is Keto! They are addictive so be aware!

Ingredients

  • 3 egg whites
  • 55 grams xylitol 1/4 cup
  • 1/4 tsp almond extract or vanilla
  • 7 ounces unsweetened flaked coconut
  • pinch salt

Instructions

  • Preheat oven to 300 F
  • Line a baking sheet or 2 with parchment paper
  • In a large bowl, beat the egg whites until they are foamy.
  • Add the sweetener to the egg whites and beat until well incorporated
  • Add the extract and salt and combine well
  • Add the coconut and mix until all the coconut is incorporated with the egg whites
  • With a small cookie scoop (1.5 TBS) or Tablespoon, spoon cookie onto baking sheet
  • Bake 20-25 minutes or until the edges are lightly browned
  • Remove from oven and let cool completely
  • Store the cookies in an airtight container
  • Enjoy!

Notes

If you have dogs - you may not want to use xylitol as it can be deadly.
If you have cats - be very careful and do not let your cats eat anything with xylitol.
You may need 3-4 egg whites depending on the size of your eggs.  Make sure the mixture is a little wet and not dry or the cookies will crumble
You can use any extract you like - I happen to like almond
Make sure the flaked coconut is unsweetened - you may have to look a little as it is not the most common form of coconut.
